Ingredients

  • 4 pink grapefruits
  • Arugula
  • 1/4 cup maple syrup (preferably golden syrup for its delicate flavour)
  • 1 tbsp Vanilla pod
  • 1/4 cup olive oil
  • Roasted pine nuts

Method

  1. Peel 4 pink grapefruit (collect juice) then segment before placing in salad bowl on a bed of arugula.
  2. Mix maple syrup, scraped out vanilla contents, the collected grapefruit juice, and olive oil.
  3. Pour over grapefruit, garnish with grilled pine nuts, serve right away and listen as the compliments abound…
