Recipe — Peach Crepes with Maple Syrup
4 portions
Metric Imperial

Ingredients

  • 1 of ready-made crepe mix
  • 3/4 cup of water
  • 1/4 cup of maple syrup
  • 2 ripe peaches, sliced
  • Maple syrup, to serve

Method

  1. Transfer the crepe mix into a bowl.
  2. Combine water and maple syrup.
  3. Add the wet mixture to the powder in the bowl. Using a beater, mix until the mixture becomes smooth.
  4. Let sit for 2.
  5. Heat a non-stick pan over medium heat and pour in 1/2 cup (125 ml) of the mixture. Move the pan to allow the mixture to spread across the pan. Put a few peach slices in the centre and cook until bubbles form on the surface of the crepe.
  6. Turn over and continue cooking until the crepe is a golden in colour on both sides. Repeat with the remaining mixture.
  7. Serve immediately with maple syrup.

More about Maple

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.

100% pure maple butter contains no butter or dairy.

Like all 100% pure maple products, maple butter comes from the sap of the maple tree… and that’s all.
