Recipe — Maple Smokestack
2 portions
Metric Imperial

Ingredients

Scotch foam (makes 2 servings)

  • A few drops single malt scotch
  • 1 tablespoon maple syrup (preferably amber syrup for its rich flavour)
  • 1 egg white

Smokestack

  • 1 1/2 oz reposado tequila
  • 2 tablespoons maple syrup
  • 4 tablespoons freshly squeezed lime juice
  • 2 tablespoons apple butter
  • A few ice cubes
  • 1 red apple slice for garnish

Method

Scotch foam:

  1. In a bowl, beat together all the ingredients with a hand mixer until you get a light, airy foam.

Smokestack

  1. Add first 5 ingredients to a shaker and shake well. Strain into a whisky glass filled with ice.
  2. Top with a “cloud” of scotch foam and garnish with an apple slice.

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.
