Recipe — Maple Carrot & Zucchini Salad

Ingredients

  • 1 lb carrots, peeled and grated
  • 1 zucchini, grated
  • 1/4 cup plain yogurt
  • 1/4 cup mayonnaise
  • 3 tablespoons maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup sunflower seeds

Method

  1. In a large salad bowl, combine carrots and zucchini.
  2. In a small bowl, whip together yogurt, mayonnaise, maple syrup and ginger. Pour over vegetables, mixing well.
  3. Add sunflower seeds right before serving.
