Christmas Syrup and Holiday Cocktails

Ingredients

  • 1 orange
  • 1/2 cup maple syrup (preferably dark syrup for its robust flavour)
  • 1/2 cup water
  • 1 cinnamon stick, broken into pieces
  • 1 clove
  • 1 fresh rosemary stem

Method

  1. Wash the orange and remove its peel with a peeler. (Use the flesh for something else.)
  2. Put the peel into a small saucepan with the other ingredients. Boil 2 minutes.
  3. Put into a jar or bottle and allow the herbs to infuse the syrup well.

CHRISTMAS GIN & TONIC

  1. Pour 30 ml (1 oz) Christmas syrup into an ice-filled glass.
  2. Add 30 ml (1 oz) Québec gin.
  3. Fill with tonic water.
  4. Squeeze a lime quarter over top, drop it into the drink, and serve.

CHRISTMAS KIR

  1. Pour 30 ml (1 oz) Christmas syrup into a wine glass.
  2. Fill with white or sparkling wine.

CHRISTMAS SPARKLING WATER

  1. Pour 30 ml (1 oz) Christmas syrup into an ice-filled glass.
  2. Fill with sparkling water.
